Some Cooking Tricks Make Your Pork Ribs Dishes More Appealing
 
将排骨事先炸酥,不仅能提味增香,同时也能创造柔嫩多汁、更具咬劲的口感!
 
Pre-deep-fry pork ribs may enhance the flavor, and create their tender, moist, chewy mouthfeel.
 
Step 1 挑选排骨部位
 
并不是每种排骨都适合油炸料理,挑选时,宜选里肌排、子排及梅花排等排骨肉质较软嫩且容易熟透的部位,才能在较短时间内快速烹调完成。
 
Step 2 油量一定要多
 
如果是分切成小块的排骨,为了使食材均匀熟成,体积不要太大且每块大小要尽量一样。此外,锅中的热油至少要能淹过炸物,最好是食材的3~4倍。油量多能产生较大浮力及热量,防止食物一加入就沉到锅底,粉浆也能尽快定型、不易脱落,食材间也不会相互沾黏。若一次油炸的食物分量比较多,最好分次放入锅内油炸。
 
Step 3 油温热度要够
 
要炸出好吃排骨,火候绝对是重要关键。根据食材体积、用途不同,油温也不一样。
 
Step 4 外酥内嫩技巧
 
分切成条状、小块或片状的排骨,维持中火油炸,看到外表已成金黄色就可离锅。如果喜欢更酥脆的口感,就待锅中炸油再次滚沸,将食材放入再炸几秒钟、立即捞出。
 
至于形状较大的整块肉排,需要较长的加热时间,才能受热均匀。先以高温小火状态炸3~4分钟,也可暂时熄火让猪排泡浸在热油中使其内外俱熟,捞出后再以大火拉高油温回炸半分钟。不但可逼出多余油脂,也因为受热程度的差别,就能做出外皮香脆、内里酥嫩的炸猪排了。

Not each pork rib is good for deep-frying. Pork tenderloin ribs, belly ribs, and pork butt are tender and easy to be cooked. Therefore, they are suitable for deep-frying method.
